Originally from the Cantal region of France, Sébastien Quinze is a lover of country music and old machinery. Passionate about convivial atmospheres, he left his native Auvergne for the islands of Grand Utopia, where he became mayor of Saint-Sébastien-le-Bec before eventually settling in Woodbridge and opening the Cantal Saloon.

Sébastien Quinze was born in Aurillac in 1987 and raised in Saint-Flour, a small town in the volcanic highlands of the Cantal. He grew up immersed in a culture of conviviality and simplicity: village festivals, folk music, outdoor life, and the particular warmth of places that do not try too hard. He developed early on a taste for authentic atmospheres and a deep discomfort with anything that felt staged.
He left France in the early 2000s, drawn by the promise of something he could not quite name, and settled on the island of Grand Utopia.
Elected mayor of Saint-Sébastien-le-Bec in 2008, Sébastien served a single term at the head of the hillside commune facing the entrance to the Jurassic Junction theme park. His tenure was pragmatic and forward-looking: he secured the construction of the Artemia hotel and developed the commercial corridor near the motorway interchange, laying the groundwork for the commune's position as a transit hub for park visitors.
He declined a second term in 2014. His successor, Élora Quinze, continued the work, and later named the town's main street after Théodore Ancel, a local figure Sébastien had been instrumental in bringing back into public memory.
At the end of his mandate, Sébastien left Grand Utopia for the island of GUOA. He discovered Woodbridge, then a village in decline, and was immediately taken by it: the wooden buildings, the slow pace, the feeling of somewhere that had once mattered and was quietly waiting to matter again. He decided to stay.
In 2014, he bought an old building on O'Donnell Street that had belonged to the Henderson family, one of Woodbridge's founding families. He turned it into the Cantal Saloon: a bar that combined Western spirit with Auvergne soul, and that quickly became a gathering point for locals and passing truckers alike.
Live blues and folk evenings, homemade charcuterie boards, gentian liqueur imported directly from his native region, and an owner whose good humour was as reliable as the opening hours: the Cantal Saloon revived not just a building, but an entire neighbourhood.
Today Sébastien Quinze is considered a guardian of Woodbridge's living heritage. He supports the Historic GU Route 66 Foundation and has participated in the restoration of Founders' Rock. Behind his bar, between guitar riffs and glasses of gentian, he tells stories about the old bridge and the pioneers to anyone willing to listen.
